Grandma’s 4 Ingredient Marinated Chicken

I had the privilege of eating this delicious chicken on skewers at a family lunch, despite usually having a bit of an aversion to meat in the last couple of years.

A recipe of my grandma's, this particular dish was delicious and I loved it. If you choose to make this on wooden skewers, place the meat and onions onto the skewers overnight for marination. If your skewers are metal, do not do this. It is also important to use a glass or ceramic container for marination as vinegar will react with certain metals.

Ingredients
  • Chicken thighs ~1kg or so, chopped into teaspoon sized pieces.
  • Vinegar
  • 3 large onions, chopped
  • 4 bay leaves
Method
  1. Place chopped chicken thighs into your glass or ceramic (not metal) container.
  2. Season with salt & pepper to taste.
  3. Layer chopped onions on top of chicken.
  4. Also add salt & pepper to taste.
  5. Pour vinegar on top of chicken and onions and leave overnight in the fridge in an airtight, completely sealed glass (not metal) container.
  6. The next day, if you are using metal skewers, you can put the marinated meat and onion onto them in the order of meat, onion, meat, onion and so on.
  7. Place your marinated meat and onion (or skewers) into a deep-sided frying pan.
  8. Pour all of the vinegar from the overnight marination on top of the mixture.
  9. On medium heat, lightly fry the vinegar off the meat.
  10. Once vinegar has evaporated, lightly fry your meat and onions (or skewers), turning to the next uncooked side once the meat lightly browns. Do not leave the meat's side at this point, as it may overcook.
  11. Remove bay leaves and enjoy!

Pro tip: Grandma said that you can actually use any meat for this, it doesn't have to be chicken.
