A simple and divine smoked salmon and avocado dish. Try the beautiful avocado/guacamole dip and you will not be disappointed. Truly easy, it actually uses two basic recipes from earlier in this site. Have a look at the ingredients and method, you'll be surprised at how easy it is to pack a delicious meal full of healthy protein.
- Simple chunky avocado dip as per HelpMeCook recipe (avocado, 1/3 of red/purple onion, 1.5 tbsp of sour cream or low fat creamy smooth ricotta, paprika, olive oil, salt & pepper)
- Scrambled eggs with onion or ham/bacon as per HelpMeCook recipe (eggs, onion, optional ham/bacon, salt & pepper)
- Smoked salmon
- Make the avocado dip
- Scramble the eggs
Note: For a pescatarian dish, you don't need to put ham or bacon into it but the onion makes it delicious. You can just make your favourite type of scrambled eggs
- Put eggs onto the bottom
- Layer salmon on top in a rose-like shape
- Put the avocado dip on top and decorate.
