Okroshka is a cold Russian soup. It is so easy to make and so refreshing to eat in summer. It is a substitution-friendly recipe that we used to eat as children, another gem made by my fabulous mum.
My fiance took one bite and it immediately took him back to his childhood. This soup should almost be renamed to nostalgia soup, it is so powerful.
I note that the combination of ingredients might seem odd when you think about them, but it really does work - the creaminess of the egg is brought out by the milk.
Also, there are variations of this recipe with Kvas, Kefir and other things; but I wanted to make the version I ate growing up, and one that is easy for anyone to make.
Ingredients
- 1 spring onion, finely chopped
- 1 green cucumber, finely sliced
- 2 eggs (1 per person), hard boiled, peeled and finely chopped
- 1 sprig of dill
- 1/2 small bunch of radishes, finely sliced
- 2 cups of milk (whole or skim - doesn't matter, we used whole)
- Optional: 1 boiled potato
- Optional: Knackwurst sausages or boiled chicken or any other type of boiled meat or even ham or bacon pieces
Method
- Chop your chosen ingredients finely
- Place the chopped ingredients into the serving bowls (2)
- Salt and pepper to taste
- Pour milk evenly into bowls
- Enjoy immediately
Pro tip: if you do want to add some meat, you can typically find Knackwurst sausages at Aldi. For tonight's dinner, we had the vegetarian version of Okroshka with chicken on the side.
