I remember eating this salad as a child. My lovely mum would make variations of it when I was growing up. Eating this fantastic salad recently served as a reminder of how the sweetest things don't always need to be expensive. I am incredibly lucky to have such a kind, smart and skilled mum and I hope you enjoy this salad recipe as much as my fiance and I did. We had it alongside our dinner, but it almost seems sweet enough to have for dessert.
Ingredients
- 4 small to medium carrots (or 2 large)
- 1 red apple
- 1 handful of sultanas
- 1-2 TBSP of sour cream (you can also sub egg mayo for this - be careful not to use the dodgy sweetened stuff, it would need proper egg mayo to work well or sour cream to be safe)
Method
- Grate carrots and apple
- Mix sour cream in
- Mix sultanas in
- That's it - you're done, I told you this is a super simple salad recipe.
Note: if you want to be a little wild and haven't met your healthy fat requirements for the day, you could also add a tiny bit of walnuts into this salad for some extra crunch.
