This spinach and ricotta salad is super easy to make and you can personalise it to your taste. Spinach and ricotta are some of the most versatile ingredients to work with and they're great for you. This salad can be eaten on the side or even by itself as a snack. If you prefer cottage cheese to ricotta, you can substitute that in instead.
Ingredients
- 375g or similar of Light Ricotta
- Bunch of spinach
- Chives, chopped (dry are fine for this), to taste
- Onion powder
- Garlic powder
- Salt to taste
- Pepper to taste
- Paprika (smoked or regular, your choice)
Method
- Wilt spinach on pan until soft. Set aside to cool
- Mix ricotta, onion powder, garlic powder and chives together.
- Once wilted spinach is cool enough, mix spinach in.
- Flavour with salt and pepper. Add salt in gradually to ensure you don't add too much in and mix it in.
- Top with paprika.

Pro tip:Â you can use defrosted and drained frozen spinach for this if you prefer. You can also add other herbs and spices if you prefer. For a kick, add some chilli in to taste.
