Pescatarian Fish Rissoles (Russian Dish)

This beautiful pescatarian fish rissoles dish is one which my grandmother taught me to make. This is the same awesome grandmother who taught me several other dishes in this blog. It might be a slightly Russian dish because we generally like to mash things together and make rissoles and things out of them. Whatever, fish is beautiful and healthy so I’m not complaining.

Ingredients
  • Any cheap white fish (basa, hoki fillet, etc) not frozen (or at least defrosted so that it’s soft)
  • 1 chopped onion (purple or white, up to you)
  • Breadcrumbs
  • Salt & Pepper
  • Rosemary
Method
  1. Blend or mash fish while it is raw with onion until it’s of a meatball-style consistency.
  2. Add breadcrumbs as fish can be quite juicy and you want it to stick together. Don’t add to many as it could become too sticky.
  3. Add salt, pepper & rosemary. Mix well.
  4. Make rissoles and fry on medium heat until golden brown on the outside and soft and cooked through on the inside.

Note: These should turn out to be soft, delicious and much healthier than many greasy fish dishes that try to make white fish adventurous. Perfect for a pescatarian who is trying to keep healthy. One of my favourites, this is an easy after-work recipe because you can stick everything into your blender or food processor and mix it up.
