Healthy Vegetable Stew & Pan Fried Salmon

This is a delicious dinner that's a fairly healthy option. If you cook this healthy vegetable and salmon meal for yourself, you'll cover yourself for a couple of dinners and lunches. I would often fry up 5-6 pieces of fish and have food available for half a week. It was only then that I realise that I can't cook unless I have variety, hence starting to cook the two bits of fish.

Ingredients
  • salmon
  • vegetables - pick any combo you like. I picked mushrooms, zucchini, capsicum, tomatoes, carrot and potato as it was what remained in my fridge
  • butter, salt, pepper
Method
  1. Cut vegetables if they are not already pre-cut.
  2. Put vegetables into pot with a tiny bit of butter. Turn on the heat and cook for 30 mins or so. Hint: if you're using hard vegetables like carrots or potato, you can boil them for a little bit first to soften them up. Season with salt and pepper.
  3. Take fish and pan fry in butter until cooked.
